This is a rich, creamy Indian chicken dish (although it has no cream)
Fry the onion in a little oil, adding the garlic after a minute. Then add the spices and stir in ad fry.
Add the chicken and mix with the spices to evenly coat.
Add tomato purée, cashews, mushrooms (if using) and sultanas - cover and cook for 5 minutes or until the chicken is cooked through and mushrooms slightly soft.
Uncover and add the yoghurt and chopped coriander - stir in well and then transfer to a serving dish.
Serve with rice.
Note: if not using the mushrooms you may need to add a table spoon of water when cooking to loosen the mix and cook.
