Mussels served in a rich creamy sauce with a difference.
Make the chips - or put some quality oven ready ones in now so that they are ready on time. If you make your own double fry them to get them nice and crisp. See the separate recipe.
Take a large sauce pan, pop in the oil and put on a high heat.
Add the ingredients in order - fry the onion to soften and garlic a little - then put the rest in and cook with the lid on for about 10/15 mins.
Keep the heat high and add the mussels.
Keep the lid on and stir occasionally.
After about 10 mins all the mussels will be open and cooked - if not keep going for another 5 mins or so.
Now using a slotted spoon remove the mussels to the serving dish
turn the heat up and reduce the remaining liquid to a gravy like consistency
Take off the heat - add the cream and stir
Poor some sauce over the mussels and put the rest in a serving boat.
Serve with your chips (pommes frites - or some fresh made crusty bread)
