Onion bajis are easy to make and a great starter
2 large white onions finely sliced
2 tsp turmeric
2tsp baking powder
1/2 cup plain flour
crushed onion, fennel, cumin and nigela seeds (about 1/2 tsp of each)
Chilli flakes (1 to 2 tsp)
Vegetable oil for frying
Heat the oil in a deep frying pan
Combine all the ingredients in a large bowl and add enough cold water to make a paste like consistency
Use a desert spoon to scoop some mixture up and using a second spoon shape in to a ball.
Place the ball in the hot oil and fry until golden brown on one side then turn over and repeat.
Do this with all the mix - I normally get about 12 bajis out of this mix and fry 6 at a time.
Drain on a rack or kitchen paper and serve with a dip or mango chutney.
Note: its easy to make these in advance (even the day before) - cool them and then pop them in a hot oven for 10 mins before serving hot and crisp once more.
